I used to love to cook, and took great joy in planning awesome meals for my family. But in the past couple of years, things have become a little more hectic, with a baby and a teenager and three in between! Unfortunately, I've become more Stouffer's than Martha Stewart. (note: Stouffer's lasagna takes about two hours to transform itself from an icy slab to something you might call dinner. That's a lot of time on Pinterest,)
...but sheesh, that's not who I really want to be, is it? Well, maybe just on Tuesdays, after I teach all day. But don't tell anyone. I have a carefully crafted facade to uphold.
So it's Friday, Friday, got to get down on Friday...(oh somebody kill the girl who sings that.) and that means my husband will come home hoping for a little more than Stouffer's. But it's 6:30, and I've taken nothing out of the freezer, and I've wasted way too much time looking at pins for my upcoming Halloween bash...what's a girl to do? Check my handy dandy recipe board. Which recipe would make him love me the most? Hmmm... Here we go. Make said hubby stop at Kroger to pick up a rotisserie chicken and some Alfredo sauce...everything else in the house! 30 minutes later, Voila!
1 (16-ounce) package penne or elbow macaroni
2 (10-ounce) containers refrigerated Alfredo sauce
1 (8-ounce) container sour cream
1 (15-ounce) container ricotta cheese
2 garlic clove, minced
3 cups cooked chicken, chopped
2 large eggs, lightly beaten
1/4 cup grated Parmesan cheese
1/4 cup chopped fresh parsley
2 cups mozzarella cheese
Prepare pasta according to package directions; drain and return to pot. Stir together all ingredients except mozzarella cheese. Spread mixture into a lightly greased 13- x 9-inch baking dish. Sprinkle evenly with mozzarella cheese. Bake at 350° for 30 minutes or until bubbly.
Verdict: Loved by all! And that's huge, especially for my 9 year old who is a conscientious objector to meat eating. Needs salt and pepper. Made a huge pan....I added a little more pasta and baked it in the humungo Pyrex. We have leftovers. We never have leftovers. That means no lunch cooking for me. Which means more pins for me. Pinning makes me happy. Looking at other people's pins makes me feel like I am reading the best magazine in the world with all my friends. Add a Diet Coke, and all is well with the world.
